Javier Dominguez

Paella Chef

Javier Domínguez is a Spanish chef whose career combines Michelin-starred training, traditional Spanish culinary roots, pastry and bakery experience, and the operational leadership required to develop and grow restaurant concepts in the United States. His cooking is grounded in Spanish product and technique, while his professional approach places equal emphasis on consistency, organization, cost control, team development, and the guest experience.

He trained at Le Cordon Bleu Madrid, where he completed the Diplôme de Cuisine between 2014 and 2016. During this formative period, he strengthened his classical culinary foundation and began building the technical discipline that would shape the next stages of his career. In early 2016, he completed a stage at Quique Dacosta Restaurante in Dénia, Spain, a three-Michelin-starred restaurant. The experience exposed him to one of Spain’s most demanding gastronomic environments and deepened his understanding of precision, product, rice cookery, organization, and the level of detail required in haute cuisine.

Later in 2016, Domínguez continued his professional development at Conceito Food Store, working within the culinary project led by chef Daniel Estriga in Portugal. He subsequently returned to Madrid and worked from 2016 to 2018 within the teams of Álbora and A’Barra, Michelin-starred restaurants where he continued developing his technical abilities and leadership experience. His responsibilities grew to include recipe development, organization of production and service, supervision of culinary professionals, and responsibility within the pastry section, giving him a broad perspective that extended beyond savory restaurant cooking.

In 2018, Domínguez joined Cala Millor in Madrid, where he ultimately held the company’s highest culinary position as Head Chef overseeing both the kitchen and bakery/pastry production. During this period, he was responsible for the culinary direction of a business whose identity combines Spanish cooking with a strong bakery and pastry tradition. The role required him to balance craftsmanship and tradition with production systems, quality control, menu development, team leadership, and the day-to-day realities of a high-volume operation.

In 2021, he moved to Miami to participate in Cala Millor’s expansion into the United States. Before the official opening of the restaurant, his work went well beyond menu creation. He spent significant time studying the South Florida market, identifying products and suppliers, comparing quality and pricing, and understanding how Spanish ingredients and preparations could be successfully translated to a new audience. During this pre-opening period, the team also developed catering events as a way to introduce Cala Millor to Miami, analyze local guest preferences, test dishes and products, and begin establishing the brand in the market.

As Executive Chef of Cala Millor Miami, Domínguez led the development and implementation of the culinary program, including menus, recipes, kitchen systems, purchasing, food-cost control, inventory, training, quality standards, catering production, and opening procedures. His role connected culinary creativity with the operational structure needed to maintain consistency and profitability while preserving the Spanish identity of the concept.

Since 2024, Domínguez has served in a corporate culinary leadership role for Cala Millor’s Miami operations, currently as Corporate Chef / Culinary Director. He oversees culinary operations across the group’s restaurant, bakery and pastry, café, and catering activities, while participating in the development of new concepts and future openings. His responsibilities include culinary strategy, menu and recipe development, product standards, supplier relationships, purchasing and cost management, staff training, organizational structure, production systems, and the supervision of culinary teams across multiple areas of the business.

His work in Miami reflects a broader objective: presenting Spanish cuisine in a way that respects its origins while remaining relevant to the South Florida market. Rather than treating tradition as something static, Domínguez approaches it as a foundation from which dishes can evolve through product selection, technique, presentation, and an understanding of the local guest. Spanish ingredients, rice dishes, Iberian products, sauces, bakery and pastry traditions, and contemporary small-format preparations all form part of the culinary vocabulary he has developed throughout his career.

Alongside his restaurant and corporate responsibilities, Domínguez has participated in culinary events and public-facing initiatives that promote Spanish gastronomy in Miami. In September 2026, he served as a judge for the FIU Pig Roast Series, adding a judging role to his involvement in the South Florida culinary community. His professional trajectory has also included gastronomic exhibitions, media-related appearances, and collaborative events connected to Cala Millor and Spanish cuisine.

Today, Javier Domínguez combines the technical discipline acquired in Michelin-starred kitchens with the perspective of a chef responsible for building teams, systems, menus, and culinary businesses. His career has evolved from classical training and fine dining into multi-unit culinary leadership, while maintaining a clear connection to Spanish gastronomy and a continued focus on product quality, consistency, and hospitality.
