Maikel Martos

Maikel Martos is a Miami-based, self-taught chef and the founder of Martos’ Rice, a catering venture dedicated to authentic paella and the traditions behind it. His approach combines a passion for rice, respect for Spanish culinary heritage, and the belief that a great paella brings people together.

His culinary journey took shape during the 10 years he lived in Spain, where he immersed himself in the country’s food culture and discovered the depth of its rice traditions. There, he came to understand paella as more than a recipe: it is a shared experience, a celebration of community, and an expression of regional identity.

In 2021, Maikel founded Martos’ Rice in the United States, turning that inspiration into a catering business serving family gatherings, private celebrations, and special events. Through years of hands-on experience, he refined his technique and developed his own voice as a chef while remaining grounded in the traditions that first inspired him.

In 2025, he returned to Valencia to compete in the fifth Signature Paella Championship in La Albufera, earning first prize. The achievement held special meaning for a self-taught chef receiving recognition in one of the birthplaces of Valencian rice culture. Building on that momentum, he opened a food trailer specializing in paella in San Antonio, Texas.

In 2026, Maikel returned to Spain to represent the United States at the Sueca International Valencian Paella Competition, where he received the award for Best International Paella. Together, these honors reflect his dedication to mastering his craft and preserving the character of traditional paella.

Today, Maikel continues to grow Martos’ Rice from Miami, offering paella catering that turns cooking into part of the occasion. From the fire and the first aromas to the moment guests gather around the finished pan, he creates an experience rooted in hospitality, tradition, and the pleasure of sharing a meal.
